Japanese love the natural taste of food. They enjoy eating raw fish (sashimi) where fresh taste comes naturally from top quality ingredients. At ArooWha, we have a high standard on all cooking materials, including the raw fish, rice, vinegar, salt and cooking oil.
Raw Fish
It all starts from the fish, they are purchased from a reputable dealer with a known record of safe food handling practices. All fresh fish are handled by our qualified chefs only and stored at 32 - 39'F for maximum 48 hours only. ArooWha would not serve the fish which has been stored for over 48 hours.
Rice
Among all different kinds of rice, ArooWha uses the Tamaki Gold Rice which is known throughout the world as the signature of quality and was ranked top Koshihikari grown in Japan. Tamaki Gold Rice has also received an award at the International Japanese Contest on Rice Taste Evaluation in 2009 and 2010.
Vinegar
ArooWha uses 100% Japanese Rice Vinegar that was made from fermented white rice and was slowly brewed over the course of one month.
Salt
To look for the perfect salt, our chef had tried many and picked the sea salt imported directly from Japan.
Cooking Oil
ArooWha insists not to use the ordinary shortening oil for cooking, but adopts the healthy and light Canola Oil, which is low in saturated fat, a good source of omega-3 fatty acids and also rich in vitamin E. It is highly recommended by nutritionists and has been authorized a qualified health claim from the U.S. Food and Drug Administration.
